The Mannequins are recurring items from the Saw franchise.
History[]
Mannequin Factory[]
John used the upper floor as his workshop, where he built his deadly traps and recorded the instruction tapes for his victims. Therefore, the upper floor, which was divided into two separate areas, was full of technical devices that he tested out on the mannequins. It was also the place, where he made the final preparations for the game of Amanda Young, a heroin addict. (Saw, III)
Wilson Steel Plant[]
Wilson Steel was a machining company founded in 1949. At some point after he started his series of murders, John Kramer, better known to the public as the Jigsaw Killer, used the multi storied factory building as one of his hideouts. There he set up a workshop where he designed and built several of the traps which he used to test his victims' will to survive. John tested out these various traps out on mannequins.
Gideon Meat packaging Plant[]

Jigsaw's workshop
Meanwhile, Hoffman got rid of his disguise and went to the cell where Corbett Denlon was still locked up. Pretending to be her savior, he took the little girl with him. When they finally reached the exit and left the building, they were already expected by the police, who had been called to the plant by Strahm. While the paramedics took care of Corbett, Hoffman was greeted by Detective Fisk who asked him about the whereabouts of Daniel Rigg. Hoffman told him that Rigg had died while trying to help and also claimed that there were no other survivors. Therefore, he was unpleasantly surprised when another team of paramedics suddenly came out of the building with Strahm, who lay on a gurney, severely injured but nonetheless alive. (Saw V)
As the police secured and searched the entire building, they discovered the many corpses of John Kramer's victims. All of them, as well as the bodies of John himself and Amanda Young, were sent to the morgue for their examination by Dr. Adam Heffner, while the traps and other evidence, such as Hoffman's blackmailing letter to Amanda, were taken to the police department's evidence room. (Saw IV, VI, 3D)
Explosive Bracelets[]
One William Easton's test was the Explosive Bracelets witch was demonstrated with a mannequin to show William what would happen is he didn't get them off.
Marv Boswick's abduction[]

Boz is abducted by William
William Emmerson decided that Detective Marv Bozwick would be his first victim, and hired a small-time criminal named Benny Wrights to lure Bozwick into the sewers. Benny disguised himself as Uncle Sam and went in search of Bozwick. Bozwick decided to keep chasing Benny and went through the ladders of the underground tunnel until reaching the sewers. Suddenly, he heard a noise coming from another part of the sewers. He held his gun, lighted the way with his flashlight and ran to see what caused the noise. Bozwick went through another pathway and saw a mannequin dressed as Uncle Sam sitting on a chair in the distance. Believing it was Benny, he screamed at the mannequin to put his hands in the air. As he got no response, Bozwick kept slowly approaching to the mannequin and kicked it off the chair. This made him realize it was just a mannequin and left him confused for a few seconds. Suddenly, William appeared behind Bozwick with a pig mask covering his face and wrapped a cloth, presumably laced with chloroform, around Marv's head until he went unconscious and was taken to the subway tunnel.
